Makes one tray of 30 x 40 cm. Use ¾ recipe for a 22 cm spring form tray (about 6 cm thick).
- 420 g flour
- 2 EL cornstarch
- 2 packets baking powder
- 240 g sugar
- Zest of 2 organic oranges or lemons
- 170 ml oil (e.g. sunflower)
- 420 ml soda water
- For chocolate biscuit: 30-50g cocoa powder
STEP 1: Preheat oven to 180° (upper and lower heat). Mix the sieved flour and the other dry ingredients with a whisk.
STEP 2: Add oil and soda water and mix quickly, stirring only 10-15 times. Small lumps are ok and will dissolve while baking.
STEP 3: Transfer to baking try and bake on the middle rack for 25-30 minutes. Leave in the tray to cool down.
For tiramisu, cut into rectangular biscuits and bake again at low heat until the biscuits are completely dry.
