Makes 20-25 small cookies
Ingredients:
- 250g flour or finely ground oats
- 125g oats
- 1/2 tsp. baking powder
- 75g whole cane sugar or coconut sugar
- 160g peanut butter
- 1 very ripe banana
- 160g oil
- 1 pinch of salt
- 1 pinch of cinnamon
- optional: chocolate chips
Preparation:
STEP 1: Mash the bananas finely or blend in the blender with the peanut butter. Add oil and mix well. Mix oats, flour, sugar and spices.

STEP 2: Knead the wet ingredients into the dry till fully combined. Knead a smooth dough, cover and keep in the fridge for at least 30 minutes.
STEP 3: Preheat oven to 175°C. Take the dough from the fridge, make small balls and shape them into cookies. Optionally, press some chocolate chips into the cookies before baking (don’t mix with the dough or the cookies may not hold together).
STEP 4: Bake the cookies at 175°C for about 12-16 minutes until they start to brown lightly. Be careful not to overbake them.
